I love me some classic chicken salad it’s a really easy way to use the leftovers from dinner plus you get a good amount of protein… gimmie all the protein! I like this simple chicken salad recipe, from the one and only Martha Stewart. Side note: have you seen Martha and Snoop Doggs baking show? I’m pretty obsessed with their friendship.
If you are looking for a lower carb option feel free to add your chicken salad to a toasted pita for an open face sandwich... it’s delish and adds some more crunch to your life.

Ingredients
- 1/2 cup reduced-fat mayonnaise
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon coarse salt
- 1/4 teaspoon ground pepper
- Half of a leftover chicken from Easy Thyme-Roasted Chicken with Potatoes
- 2 peeled and thinly sliced Golden Delicious apples
- 3 to 4 thinly sliced celery stalks
- 1/2 cup coarsely chopped toasted walnuts
Directions
Step 1
- In a large bowl, whisk together mayonnaise, lemon juice, salt and pepper.
Step 2
- Remove skin from half of a leftover thyme-roasted chicken.
Step 3
- Shred meat, and add to dressing. Add apples, celery stalks and walnuts. Serve over a bed of lettuce
